Poached eggs on toast with a side helping of scrumptious vegetables

This literally took me about 15 minutes to do, was the easiest and scrumptious lunch Ive had in a while. While this was nice and healthy, the cookies I devoured after it was not, but hey, im only human!!

Ingredients for two: 2 eggs, portion of mushrooms, spring onion and tomatoes, dash of olive oil and a pinch of salt/pepper. 2 slices of brown bread.

Method: Heat a medium sized pan with the olive oil. Chop the spring onions, mushrooms, cherry tomatoes and toss them into the pan for 5/7 mintes. Add in the salt/pepper to season.

While these are cooking, Fill a saucepan with a couple inches of water. Heat the water on high until it reaches a bare simmer and bubbles start appearing at the bottom of the pan. Crack the eggs into the water and allow to simmer gently on the lowest heat for 3 minutes. I tend to toast the bread and once this is done, take the eggs out and put on top. It depends on how you like yours cooked, I like mine particulary runny but if you prefer a harder egg, then just simmer for a little longer.
Place all cooked foods on a plate and tuck in my friends
