Since im trying to lose the last stone of baby weight, I have been trying my hardest to eat healthy and work out as much as I can. As im only human, I of course, fall off the wagon some of the days and reach for the cake tin and scoff to my delight. On my good days, I will try and make something nice and really go to town with it. I recently tried Avocado Baked eggs and even I was pretty surprised at how good it was considering Im not an avid fan of avocado…. Please see recipe below and give it go.
Avocado Baked Eggs. Prep: 5mins Cook: 20mins Serves 4
You will need
- 4 ripe avocados
- 8 medium eggs
- fresh parsley
- salt and pepper
- button mushrooms (as many as you like)
- baby plum tomatoes
- 1 Courgette
- Rapeseed oil
- Ciabatta Bread (This is optional)
Method: Preheat the oven to 220c/425f/gas mark 7. Cut the avocados in half and take out the stone. Scoop out 2 tbsp. from the centre of the avocado and make a small cut on the bottom of each half to prevent them from tipping over. Gently break an egg into each half. Bake in the oven for 15 minutes. Slice up the vegetables and cook the vegetables in a little oil for 5 mins. Chop the parsley finely and sprinkle over the avocado, Season with salt and pepper and serve alongside the vegetables and some ciabatta bread.
